INSTRUCTIONS:

  1. Approximately 1½ to 2 hours before serving, trim beef of any outside fat. Let the beef come to room temperature and season with salt and pepper.
  2. While beef is setting, make spread by whipping all ingredients and refrigerating until later. Go ahead and pre-heat oven to 425.
  3. Heat a cast iron to medium heat.
  4. Lightly butter both sides of each piece of bread and grill until lightly browned. Set bread aside.
  5. Add a tbsp of butter or oil to the pan and sauté shallots until golden brown. Set aside.
  6. Heat the cast iron to hot! Add 1 tbsp butter to the pan, once butter is browned sear your steak on each side for a few minutes. Add the pan and hot steak to the oven at 425 degrees to finish cooking until medium rare or your preferred level of finished. Please don't cook it well!
  7. Remove steak & let it rest for about 5 minutes. Once rested, slice steak thinly.
  8. Assembly time...divide the spread between the twelve slices of grilled bread, top with the beef, then shallots and finally a few blue cheese crumbles. Enjoy!
